While in college, I had a friend who loved to cook. A dream of hers was to own a restaurant called, “Pizza Cake.” During many of our wild college nights, she would hook us up with a full meal. One of my favorites being, “Taco Soup.” This meal carried us through the struggle and still does.
1 lb Ground Beef or Ground Turkey 2 cans of Seasoned Black Beans
1 can of Rotel (Mild or Spicy)
1 can of whole kernel corn
Sour Cream * Shredded Cheese* Tortilla Scoops*
She would begin by cooking the ground beef and seasoning it to her liking. Then drain the meat and add it to a pot with black beans, corn, and a can of Rotel. After about 15 minutes of simmering, you can
season to your liking and add whatever touch (water or additional seasoning). Scoop some into a bowl, add the cheese, and top it off with sour cream. Let the crush commence! Thanks Crystal for your teachings.
